Šurlice pasta is more than just food on Krk island – it's a connection to our grandmothers, a celebration of simple ingredients transformed by skilled hands, and a symbol of the island's culinary heritage.
This traditional pasta, unique to Krk and the surrounding Kvarner region, gets its name from the Croatian word "šurlati," meaning to roll. The pasta is made by hand-rolling small pieces of dough around a thin wooden stick or knitting needle, creating hollow tubes perfect for holding sauce.
Traditional Šurlice Recipe:
Ingredients:
- 500g flour
- 3 eggs
- 2 tablespoons olive oil
- Pinch of salt
- Water as needed
Instructions:
- Make a well with flour, add eggs, oil, and salt
- Mix gradually, adding water until dough forms
- Knead until smooth and elastic
- Rest for 30 minutes
- Roll into thin ropes and cut into small pieces
- Roll each piece around a thin stick to form tubes
- Let dry slightly before cooking
